Easy 5 Ingredient Vegan Chocolate Ice Cream
Only 5 ingredients stand between you and some delicious creamy (almost raw) vegan ice cream: Cashew nuts, cacao powder, vanilla extract and maple and agave syrups (vegan chocolate chips optional.) Even a picky 7-year old will love it. Enjoy! ps The ice cream is 90% raw because maple syrup is typically processed with heat above 115F degrees. pss Oops! Made a mistake when I answered a posted question below – must have been zoning out! I’m using the Blendtec blender. Although Vitamixs are great too! I wrote a review comparing the two on my blog here: thelabrawtory.com The ice cream maker is the Panasonic BH-941P Ice Cream Maker. It’s very easy to use and compact. Just don’t put too much “batter” in it because then it won’t freeze sufficiently. But I believe this model ice cream maker has been discontinued.

COCONUT BANANA ICE CREAM – Dairy free, no ice cream maker required
A great recipe I found on the blog, “Making Love In The Kitchen”, by holistic nutritionist Meghan Telpner. Super simple, and dairy-free. I made a double recipe in the video, and also forgot to add the vodka – so this batch froze pretty solid. If you find you ice cream is too hard to eat, just let it sit in a sink filled with hot water and it will thaw pretty quickly. I used plastic tupperware for storage here, but always use glass for food products if you can. COCONUT BANANA ICE CREAM 1 can full fat organic coconut milk 1/4 cup honey 1 large banana 2 tsp lemon juice 3 Tbs dried coconut 2 Tbs Vodka (Optional: Lowers freezing point, makes ice cream smoother) Plus any fruit of choice – berries, mango, pineapple etc. • Place banana, lemon juice and honey in a blender and process until well mashed. • Add coconut milk, dried coconut and optional vodka and blend again. Meghan Recommends: • Freeze in ice cube trays for 3 or more hours, reserving about a 1/2 cup in the fridge. • Place about 3 cubes per person into the food processor, add some of the non-frozen mix and process until smooth.
